This. It was perfect. Amazing. So good. I’ve never had mole sauce, so I have no idea what the authentic stuff tastes like. But, I don’t need to know. Whether or not this is anywhere close, it’s incredible. Noah requested we have it every night, and I’m inclined to indulge him on that one.

Chicken in Mole Sauce

Instructions

  • Put the chicken in a pot with enough water to cover and bring to a boil.
  • Reduce heat and simmer for 15 minutes.
  • Reserve 1 cup of broth from the chicken and pour out the rest, then combine the 1 cup broth with the remaining ingredients and add to the pot with the chicken.
  • Bring to a boil, then reduce heat to medium-low and simmer 30 minutes, stirring occasionally.

  1. This looks great! I’m hoping to make tonight. Do you make it with the ‘meaty’ no mato sauce? Or do you leave out the meat?

    1. Nevermind! Ha I looked again and saw the recipe for no mato sauce without the meat!

  2. The link for the nomato sauce gets an error. I tried searching the blog too and just got recipes that reference the nomato sauce but every time I click on the link–from any recipe–it gets an error. Recipe looks great but have to figure out how to make the nomato sauce. 🙂

  3. I’m planning to transition from standard Paleo to AIP very soon and looking forward to trying this recipe. What kind of chicken do you use (boneless breasts, split breasts, boneless thighs?), and how big are the pieces (roughly) after you chop it up?

    1. I usually use breasts and chop it into bite-sized pieces, but you can easily use any kind of chicken meat you like or have on hand — you may just have to adjust the cooking time depending on how big your pieces are.
