So good! I’ve always been a fan of pickled okra and had never had it any other way. I think this would go great with fish and other roasted veggies!

- 1 quart okra sliced
- 2 tablespoons coconut oil
- 1 tablespoon sea salt
- 1 tablespoon ground ginger
Instructions
- Preheat the oven to 425F.
- Combine all ingredients in a large baking dish and bake for 15 minutes.
