Ingredients
- 2 strips bacon
- 2 whole eggs beaten
- 2 tablespoons coconut milk or cream
- 1/8 teaspoon sea salt
- 1/8 teaspoon ground black pepper
- 1/4 cup pineapple diced
- 1 tablespoon onion chopped
- 1/4 cup avocado chopped
Equipment
Instructions
- Cook the bacon in an omelet pan or small skillet until crispy. Remove from pan and dice.
- Mix the eggs, cream, and pepper or other seasonings.
- Add the eggs to the pan and then add the pineapple, onion, and diced bacon on top.
- Cook until set, then flip and cook the other side.
- Serve hot with avocado on top.
