Plantain, Yam, or Sweet Potato Flour

If you’ve never made your own flour before, don’t be intimidated. It’s super easy, and practically foolproof. You can use these flours pretty much anywhere you’d use other flours (except coconut flour), though results will vary depending on the recipe. Use plantain if you are on a low-FODMAP diet. This recipe is for plantain flour, but you can use the same amount of yam or sweet potato for different types of flour.

Instructions
- Slice your vegetable of choice into chips about 5mm thick (a mandolin slicer makes this a piece of cake).
- Arrange on a baking sheet in one layer.
- Bake at 200F for 2-3 hours, until completely dry.
- Grind into flour in a food processor, high-speed blender, or grinder.
