We didn’t have Sloppy Joes often when I was a kid, but when we did… oh man. I’m not sure how my mom made them, but I imagine most of the meal came out of a can. She’d serve them with pasta salad or macaroni and cheese (a full-fledged pastaholic to this day, my mom served most things with a side of pasta). Or if we were at my grandma’s, a side of potato chips. Not the healthiest of meals by any stretch of the imagination, but an awfully satisfying one! Mine’s pictured with my Five-Minute Sandwich Bread for an easy gluten-free bun, but for an AIP version, I suggest serving as a lettuce wrap or on a roasted sweet-potato round as an open-faced sandwich. Roasted broccoli or asparagus, or even a side salad, make for good companions!

  • In a large skillet over medium heat, cook the beef with the onion until the beef is browned on all sides.
  • Drain off the fat, then stir in the remaining ingredients and simmer over medium-low for 30 minutes.
  • Serve with your favorite Paleo or AIP bread or in a lettuce wrap.
