This is a great go-to dish for leftover chicken and veggies, an on-the-go lunch, or a picnic or potluck item. It is definitely a crowd-pleaser! You can also use tuna, if you like.

Chicken Waldorf Salad
Ingredients
- 1 pound chicken cooked and chopped
- 1 whole green apple chopped
- 1/2 cup grapes sliced
- 1/2 cup celery sliced
- 1/4 cup green onion chopped
- 1/2 cup coconut cream
- 2 teaspoons lemon juice
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground ginger
- 8 cups mixed greens chopped

Instructions
- Combine the chicken, apple, grapes, celery, and onions in a large bowl.
- Separately, combine the remaining ingredients except greens. Stir the dressing into the chicken salad and marinate at least 30 minutes in the refrigerator.
- Serve over greens and season to taste with salt, ginger, lemon juice, and/or olive oil.
What do you mean by coconut cream in this recipe? The top seperated portion of canned coconut milk?
Yes, though you can also buy it by itself in cans.
