Dressing
- 1/3 cup apple juice
- 1/4 cup apple cider vinegar
- 1 tablespoon lime juice
- 1 tablespoon shallot diced
- 1 teaspoon honey
- 1/4 cup extra virgin olive oil
- salt to taste
Salad
- 2 pounds cucumber diced or julienned
- 1 bulb fennel diced or julienned
- 2 medium pears diced or julienned
- 1/2 cup pomegranate seeds
Instructions
- To make the dressing, puree the ingredients in a blender until smooth.
- To make the salad, combine all ingredients and toss with the dressing. Serve immediately or refrigerate first if needed.
