This Strawberry Shortcake Mug Cake takes the fun of single-serving microwave cakes out of the microwave! Since a lot of people don’t like using them or just don’t have one (heck, I’d like to be able to use the counter space mine takes up!), being able to make something like this in the Instant Pot is pretty cool–one of those perks of having one you’d never think about on your own. I mean, really, a mug cake in the Instant Pot? Crazy! And the best part is it’s delicious. Like any strawberry shortcake dish, strawberries are the highlight here, with a light, somewhat vanilla-flavored, cake. Paired with melty whipped cream, it sort of reminded me of the flavored oatmeal packets I grew up eating for breakfast. You know the ones, with dried strawberries swimming in cream. Mmf. Now that’s comfort food. I might have to make another mug cake, just thinking about it!
The recipe comes from Jennifer Robins’ latest cookbook, Paleo Cooking with your Instant Pot. Jennifer is kind of a powerhouse, the author of many of my all-time favorite Paleo cookbooks. We’ve even been thinking about trying our Instant Pot out on camping trips in lieu of a camp stove because of all the cool things it can do–we wouldn’t need to bring any pots or skillets along, for starters!
