Simple Banana Pancakes
Does it get any simpler than two ingredients? Nope! If you add fruit or chocolate chips to these, you don’t even need any toppings! That said, a little fresh fruit, compote, whipped coconut cream, homemade caramel, or toasted coconut flakes make this simple breakfast a near-decadent treat. You can also add fruit (fresh or dried), nuts, carob nibs, cinnamon or anything else you like to the batter.

Instructions
- Heat a skillet or griddle over medium heat. Puree the banana and egg until smooth.
- Pour the batter into 4″ rounds onto the skillet. Cook until bubbles form in the surface and begin to pop, then flip carefully.
- Cook another 2-5 minutes, until set. Serve hot.
