As a kid, I was always nuts for sausage. It was my favorite part of those rare Denny’s outings my dad and I would make before school started in the morning. When I gave up veganism, it didn’t occur to me that I could now eat sausage again… until now. Took me long enough! This version is a lot safer than any prepackaged sausage you’d find in the store, and just as spicy-tasty. It’s super easy, too! I like to serve these with some avocado and olives inside a lettuce wrap. Mmm.

  1. I made mine with lamb (hope that’s okay) and finally added it to the sausage and apple stir-fry recipe. It was delicious! Thank you!

    1. I’m so glad you liked it! Lamb is one of my favorite meats to use, but the nice thing about most ground meat recipes is that you can use any type you like and still wind up with something awesome. 😀

  2. Love your site and this recipe sounds great. And I love that you include nutritional info with many of your recipes, because I am trying to track fiber intake. I don’t really expect fiber in a meat recipe like this but was surprised to see this has 3 grams of fiber per serving?! Are you sure about that? Where is the fiber coming from? Surely not from a couple of tablespoons of herbs? Thanks!

    1. Thanks for bringing that to my attention. I recalibrated this recipe and the nutritional info should now reflect the update. Enjoy!
