Chicken Waldorf Salad

Ingredients

  • 1 pound chicken cooked and chopped
  • 1 whole green apple chopped
  • 1/2 cup grapes sliced
  • 1/2 cup celery sliced
  • 1/4 cup green onion chopped
  • 1/2 cup coconut cream
  • 2 teaspoons lemon juice
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground ginger
  • 8 cups mixed greens chopped
Equipment

Instructions

  • Combine the chicken, apple, grapes, celery, and onions in a large bowl.
  • Separately, combine the remaining ingredients except greens. Stir the dressing into the chicken salad and marinate at least 30 minutes in the refrigerator.
  • Serve over greens and season to taste with salt, ginger, lemon juice, and/or olive oil.
